I found the recipe:

Pheasant sandwich recipe
If you're looking to make an original World War II pheasant sandwich, use the following recipe:
• 3 cups cooked pheasant, finely chopped
• 2 hard-cooked eggs, finely chopped
• 2 carrots, grated
• 1/2 medium onion, finely chopped
• 1/2 cup finely chopped celery
• 2 teaspoons sweet pickle relish
• Salt and pepper
• Mayonnaise or salad dressing
Mix all ingredients together. Add mayonnaise or dressing to make right consistency. Chill. Spread on sandwich bread.
