I just take the backstrap off and the belly piece. Make sure not to cook any of the red meat along the lateral line. Its all fat and is very fishy and would make eating them, not a pleasant experience. Just a lil' Slap n Tickle, n Tickle n Slap.... Be careful, I can be potentially deadly....
