The Silver Satin Pickled Fish Recipe

There has been a few gents that have asked to post up this fish recipe, so here it is. Thought maybe some spring pike anglers may want to give it a shot, it sure is killer recipe.

The Silver Satin pickling fish recipe.

Brine: ½ cup sale (Not iodized) to 1 quart water. Place fillets of fish in crock with brine for 24hrs. Cut fillets into squares approximately one inch by one inch. Cover completely. Drain brine after 24 hours. Cover with white vinegar for 12 hours. Drain off vinegar and throw away. Pack fish in jars and add raw onion slices alternating layers. Add enough pickling solution to cover fish and then cover the jars

Pickling Solution: 4 cups white vinegar, 3 cups sugar, 1 cup silver satin wine or yellowtail, 2 raw onions, sliced fine, ¼ cup pickling spice

Method: Dissolve sugar in white vinegar. Heat, then cool. (Do not boil) Add silver satin, onion s and pickling spice. Bring to a boil then cool.

Sorry, obviously thats "Salt" not "Sale".  Canning/Pickling salt in the green box to be exact.

 I've never been much of a fan for pickled fish so I'll share my recipe for Canned Fish.

I keep my snot-rockets from ice fishing and fillet them and take off the rib cage but don't bother with the Y bones as they melt in this recipe.

Cut fillets  into chunks small enough to stuff into a pint jar. (don't overstuff)
1 Tbsp of Tomato Sauce
1 Tbsp of Vegetable oil
1 Pinch of salt
1 drop of liquid smoke (if you want a slight smoky flavor)

Pressure cook the covered pints for 90 minutes @ 10lbs of pressure.  
(I make 13 pints at a time)
Afterwards the fish looks kinda nasty while it's in the jar but just strain off the liquid and make your favorite recipe substituting the canned fish for any Tuna dish or sandwich spread.  It's FABULOUSLY GOOD !!!

Made a batch two nights ago, one fish, 3.5 quarts. Damned northern took a 16" walleye, dived with it, hit it again the second time up, third time was trailing it but could not net him. When I went back through I caught him. He's now as pickled as I was on the 4th!

What type of wine did ya use was the liquor store, they told me they no longer make a silver satin wine.

Thunderbird, it's the American Classic. Google hobo wines, you may get a good laugh. I've got an old recipe card made by Thunderbird for pickled fish. There's another just like Thunderbird that Big J uses, can't remember the name, if you come down to Mobridge you can find them both.

I have often thought same thing.

He could be all "Soup Nazi" about it, refusing service to those who's attitude or appearance he dislikes.
