Salmon Recipes ??????????

Well she did it again! My wife out-fished me tonight. Her biggest fish was a nice salmon. It was the first salmon we have ever boated so I am wondering how you guys prepare your salmon? I am thinking about trying it on the grill with some wood chips....... Any suggestions?????

For a simple recipe:
Grill over coals basting with butter and minced garlic.  Don't overcook and dry it out.  Serve with fresh salsa.

For something a little more involved:
HONEY GRILLED SALMON
4 salmon fillets with skin and bone removed

2 tablespoons olive oil

Salt/ pepper
sauce

¾ cup honey

¼ cup soy sauce

¼ cup brown sugar

¼ cup pineapple sauce

1 tablespoon lemon juice

2 tablespoons white vinegar

2 tablespoons olive oil

½ teaspoon cayenne pepper

½ teaspoon paprika

¼ teaspoon garlic powder

To make sauce, combine all ingredients in an a sauce pan and cook over low heat.

Rub salmon with olive oil, lightly season with salt & pepper.

Grill over med/high heat basting lightly with the sauce. Salmon is done when it flakes easily at its thickest part. Smother with remaining sauce and enjoy

Seal in a foil pouch with lots of butter and lemon.  Salt and pepper to taste.  Bake at 325 for 20-30min.  Serve with asparagus, wild rice and chocolate milk.

Gave this technique to a buddy a few years back.  Was told it was no good because the fish didn't thaw completely in the oven...Called him a dipshiite then he blamed his wife.

I've done salmon a bunch of different ways.  But the best way by far is cedar plank salmon.  they sell the planks at walmart.  fillet it out like normal.  then cook it on the plank with a little olive oil on it and some garlic salt and a little parsley.  it's amazing.  follow the directions on the plank, you have to soak it in water first.
