Salmon recipe

We hit early ice last night and caught a couple Kokanee Salmon.  I'm looking for a good smoke recipe or a canned salmon recipe?  Anyone got a favorite they would like to give out.  You can post it or PM me.

best damn way to eat it is grill it on a cedar plank.  it's awesome

Also smoke with apple chips and glaze with a brown sugar syrup is a good way.

Agree 100%.   Where did you catch the kokanee?  Holter?

Here's one you won't be disappointed in......Best smoked salmon recipe I've ever had. 

Brine:
4 cups water
2 cups soy sauce
2 cups apple juice
1 cup packed brown sugar
1/2 cup canning or pickling salt
2 Tablespoons whole black peppercorns
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground pepper


I usually soak it in brine at least overnight and then smoke with hickory.  I have found the brine has a hard time penetrating the skin...fillets work the best.  I tend to tone down the pickling salt from what I listed, otherwise it gets a bit to salty for my taste.  Hands down the best smoked salmon I've had.
Just remember, the early bird may get the worm, but the second mouse gets the cheese.......

Bet V-dawg's deal would also work great with a turkey.  I'd back WAY off the salt because of the soy.

1 cup canning/pickling salt

1cup brown sugar

1cup molasses

1 1/2 cups white sugar

Works great for salmon, turkey, pheasant, pike and ever paddlefish.

Mix ingredients in a 5 gallon pail with a little hot water to disolve everyhing.  Add some cold water and put what ever you want to smoke in pail and fill with cold water.

I will inject some of the brine into a turkey after adding some cold water to dilute the brine a little bit.    I will soak for at least 24 hours most times 48 hours in my spare fridge.  When you take meat out pat it dry before putting in smoker.
