Did some salmon fishing yesterday and one of the fish caught was pretty sickly looking. Thought it was a little early for them to be turning already. My question is how do you determine when they are no longer good for eating or are the ones turning black also good eating? I sick looing one had much lighter flesh then the rest. Barely any pink to the meat. Thanks fellers.

Fillet the salmon as normal--then lay it on a screen window--if it runs through the screen, don't eat it!

Salmon that are too far turned have mushy meat; if the fillets look tight the meat is fine.
