 just got done eating some beer battered perch that were amazing just wondering how everybody else made perch.

Original shore lunch with some corn meal added for crunch and dip in hot grease.  Good Stuff!!

Frying Magic is good to coat them by adding beer.  Likely cheaper than the big name stuff.  I have also used it on pheasant "nuggets" deep fried and it was great.

I saw a Fish & Chip restaurant owner recommend club soda instead of beer.  Said it made for a lighter crisper texture.  May try it next time and provide myself with an extra to drink instead of wisk.

This is my favorite recipe for any kind of fish- It is excellent 

Panko Fried Fish

Ingredients

- Fish fillets of your choice
-seasoned flour(salt pepper, cajun, or whatever you like)- enough to coat fillets
-eggwash (1 egg + 2-3 tablespoons milk, whisked together) - enough to coat fillets
-panko japanese bread crumbs (can find in most grocery stores)- enough to coat fillets

Recipe

Get three bowls and place seasoned flour, eggwash, and panko seperately into bowls

1) First coat fillets in seasoned flour
2) Dip into egg wash to cover fillets
3) Then dip in the Panko bread crumbs

Fry in hot oil

**MUST SERVE WITH FRANKS RED HOT SAUCE OR THE FISH GODS WILL HURT YOU!!

Every now and then I will make fish jerky.  Just google "8 hour squaw candy" recipe is meant for salmon, but it works just the same with perch, panfish, crappie, etc.
