How to clean a perch

nice different method  but it does leave bones in them.

 This is how I grew up cleaning perch...my grandfather taught. We've always called it "heading and gutting them".

Just cook them as is. The meat falls right of the ribs when you use a fork along the spine. Absolutely no meat wasted, and certainly faster. It works great for walleyes also.

We used to scale or skin everything when I was a kid.  It works ok and like ND walleyes says, The meat peels right off the bones,  We ate perch with two forks for that reason .     I was glad though when we learned how to fillet  after the ol man ordered a finland fillet knife(he called it )  from  Herters,  The old fashion way was tough on fingers.

Tough to beat ,     We wrapped them individually in tinfoil with butter and pepper and sometimes onion and cooked them on the old wood stove in the fish house .
