Goose summer sausage

 I have a lot of goose meat already and about 20lbs of jerky. So I was wondering if anyone has tried making summer sausage out of their goose. And if so how it turned out.

Just had 80 pounds made at West Dakota. Jalapeno and cheese.  Excellent!!!!

55% pork        44% Beef             1% Goose    You wouldn't believe how good it is, you can't even taste the goose hardly.

 60 % pork, 40 % venison, feed the goose meat to the cats. Makes great summer sausage!

You last 2 guys are crazy.  Goose Jerky, Goose Summer Sausage, and Goose Sausage are all excellent.  And really what the hell else are you going to do with a goose?

Have never had goose summer sausage but about 10 years ago I had some goose ring sausage and was blown away how good it was. Wish I knew where he got it. Have had goose jerky from the hickory hut and it was really good too.

 Didn't get a deer tag last year so I just used goose to make summer and breakfast sausage last year.  Used probably 40% goose and 60% pork and it turned out very, very good.

Took 25lbs last year to DW Meats on 12th St in Bisamrck and had Jalapeno/Cheese Brats made - they were excellent.
