Fillet knives

 It was brought to my attention that you can't get the belly meat clean off of a fish with an electric.  It was mentioned that panfish are particularly difficult.

Below is are the fillets from an 8.5" bluegill:

 

Admittedly, if you make a flub with an electric, it's a tougher mess to fix.

See you took someone along that could catch fish!
In my lifetime I have seen fence row to fence row farming and the return of CRP and game to the landscape.Now we face again the prosepect of fence row to fence row again! Sportsman are our own worst enemy in that we fail to look forward and focus to much on the now!

After being a dyed in the wool, old fashioned filet knife kind of guy for many years, I switched over to an electric about 3-4 yrs ago.  Absolutely love them!  Especially when it comes to the ease at which I can filet out the belly meat.  Rapala curved blades are what I prefer.  


I remember as a kid a fella who would filet 5" sucker minnows just to prove he could do it although I don't recall him going after the belly meat. 

For the record, I too would be happy to catch and keep a good mess of 8.5 inch gills.  They are delicious!

For the record, I will stick with my 18-20" walleye and leave the belly meat for the birds!

My family and I have done quite a few "blind" taste tests where we tried to judge only by texture and taste, the bluegill always wins. Of course it's hard to be blind to the differences in size, etc. as you're doing the test.

We once tested fresh white bass, perch, gills, eyes, and crappie - all from one good Ashtabula outing, fishing one spot. The gills won.

They are the family favorite with perch, eyes, and crappie all being unique and close to as good, but not quite what gills are. That chewy crunch of that belly meat "chip" just can't be beat.

And all I use is the electric. Just takes practice as Horsager's pic confirms.

Did you know the "fishy" taste that sometimes accompanies a fillet isn't the belly meat?  It is the red lateral line?  Some think it is the belly meat and toss it because.  That's why I like the electric the most.  You get a nice clean fillet to start with before doing the deboning.  You can leave almost all of the red lateral but not waste meat on the fillet.

Or I guess I could bleed my fish out.  But I like taking nice photos and to bleed them takes the color out unless winter or cold caught fish (fall or early spring).  Even then they sometimes lose color though.

'Nother good use for an electric.  Have an unzippered fillet rib side down, start at the tail working towards what would be the head end.  Get a shallow slice going and find the bones in the lateral line.  You can keep the knife tight against those little bones and peel all the red meat off very easily.
