Deer Liver

Anybody on site eat deer liver? Anybody have a good concotion? I normally save it, boil it up, and feel the morsels to my dog over a couple weeks. I like Deer heart alot, but have a few livers I want to give a shot. Ideas?

Cheers,

If you like beef liver, you will not be disappointed with a deer liver... of course, the younger or doe seem to have a better taste.

Brown it up with onions and then put a can of mushroom soup over the top and simmer for 30 minutes. Add a side of potatoes, green beans and beverage of choice.

This is our families opening night of Deer season  {or as soon as a liver is available} meal...

Each year I try to take a fawn or two to have fresh deer liver(Yes I shoot fawns) and the best way I have found to eat deer liver is to cut the large part of the liver into 1/2 inch slices, roll them in flour seasoned with salt and pepper.  Be sure to take the outer skin off of the liver as I have found it can change the flavor of the liver.  Then slice up a couple onions, saute them in butter and beer, with a little salt.  Cook them until done to your liking and then remove most of the onions.  Add a little more butter to the pan and then add the liver.  Fry them in  the onion butter on about med high heat.  Let them brown good on one side, then flip them over to brown on the other side.  Make sure to leave them a little red in the middle (med done, as this way they are not tough) and about 30 seconds before taking them off the heat, add a good sprinkle of lemon juice.  This is the way we have our first liver every year!... Awesome!

3/8  to 1/2 inch slices of FRESH deer liver soaked in a lightly salted ice-water.  1st, saute 1 lb of thick sliced bacon.  Save enuf bacon grease for frying-1 lg onion sliced 3/8 in thick. Put onion and bacon on paper towels on a plate to drain. Lightly dust the liver slices in well-seasoned flour.   Use more bacon grease to fry liver to med only.[slightly red in middle]   Put the liver, onions, and bacon back into frypan and cover with heat to reheat just enuf to serve.  Fresh, young liver is best, and will rival the best of meat entrees!

IntoC, Thats a great answer to a simple question, I will take your advice and Im still laughing. The only kind of liver I will eat is a chicken liver and that is because it is very small and only involves one bite.

I've always enjoyed eating measure-it's recipee.  It's realy good but fry up a ton of bacon for those that aren't sold on the whole liver flavor.  Always better with a bunch of friends and family and a lot of cold beer.  As far as gas goes... I know it hits some more than others.  I also know that measure-it's gas is far worse after leaning over a gut pile than a good liver fry.

I tried liver tonight. It's nothing like deer heart. The liver was not very good at all. My neighbor fried it with some flour coated seasoning. I will way, I will boil the livers and keep them for dog treats from now on... Ufda....

That's too funny!! I'm still laughing!

A lot of people like it. I've eaten it, but I'm not a big liver fan.
Very high in cholesterol. Good excuse not to eat it.

I like gizzards, hate halva and heart, and don't mind pickled herring but I don't crave it. Pickled eggs, however, are a tasty treat.

I like liver sausage but I've never had liver any other way to be honest.

Any blood sausage eaters out there?

The heart is the best part of the deer in my opinion. slice it, fry in butter with a little garlic salt and pepper ,add a can of mushrooms. yum yum but liver?  yuck, my dog wont even eat liver.  only dog ive seen that spits it out. Dad used to cook it from the first deer of the year and id eat it if thats all there was . feeling ill thinking about it...
