Chili ?!?

With the unseasonable cooler temperatures this week…I’m thinking of making up a nice batch of chili this weekend.


What’s everyone’s preferred chili recipe?


Of course I have nothing written down and never measure ingredients for the most part mine consist of ground wild game of some sort (I’ve used venison, elk, moose and antelope) fresh peppers (usually green, red, Anaheim, Poblano  and Serrano) a few cans of tomatoes, steak and an assortment of seasonings.

can of salsa
chilli pepper
salt
pepper
kidney beans
corn
1/4 cup brown sugar
squirt of mustard
cap full of liquid smoke
barbeque sauce
garlic salt
pound of hamburger

I always add a can of chili beans and a habanero so the wife just about cries when eating it and you have to drink a six pack with it to tame the flame

 

If we're not supposed to eat animals, how come they're made out of meat?

6 pack beer 12 ounce ea. your favorite.
1.5 # burger
1.0# bulk pork sausage
1.5 # stew meat cut in small bite size pcs.
1 bottle your favorite bbq sauce (recommend Space Aliens)
1 pkg frozen "sweet" corn
2 green bell pepper
1 yellow or red bellpepper
1 clove garlic
1 stalk celery
1 large onion
1/4 small head cabbage
1 can mushrooms
1-2 large cans stewed tomatoes.
1 large can red kidney beans
1.5 tbsp chili powder +
1 tbls cumin ground +
tobasco sauce to taste (tsp +)
1-2 tbsp ground red pepper +

dice up veggies to edible size pcs
brown meats until done; drain off grease


Add beer to 10 quart pot (makes about 10 quarts; freezes well) add bbq sauce
place pot onto med heat burner
add browned meat, diced/canned/packaged veggies(save beans), seasonings.

Simmer for an hour or two or three until the celery is no longer crunchy (for me). 

:30 minutes before you want to eat it add the kidney beans if you wish to include them.  

enjoy.

A version of this won the KFYR cookbook main entry back in the 1980's.  Called Headquarters Chili.

Back in the day when my guts could handle 'hot' chili we'd double the seasonings, increase the beer and drain off some of the liquid for chip dip!!

Wife just mixed up a batch of this chili last weekend.   We freeze approx 3 quarts each in 2 separate ice cream pails.   Keep rest available to eat right away or as leftover.    Have cheese available or better yet cheetos if that suits your fancy.   Chili freezes very well and keeps well up to 4-5 months in freezer but never lasts that long in this house...You'd love this cooked over the heater out on the ice in the shanty!!

oh! yea!   this above recipe will win most farting contests in the cab of your pickup while your out chasing that big whitetail or muley too....OR if you don't want  to deal with that drop the cabbage and beans....good huntin/fishin..

2 pounds ground venision
5 large raw tomatoes
1 green pepper
1 yellow onion
3 jalapenos
1 can undrained chili beans
1 can drained pork and beans
1.5 tbsp chili powder
1.5 tsp cumin

brown the venison, then add the diced green pepper and onion and fry until tender. Pour the venison with green peppers, jalapenos and onions in a crockpot. In the same fry pan add 1 tbsp oil and the 5 raw tomatoes diced. fry at med high heat for 3-4 minutes to remove some of the water. Then pour the tomatoes into the crockpot and add the remaining ingredients. Mix and leave the crockpot on low for up to 8 hours.
I like to garnish with raw onion, sour cream and cheddar cheese.
A very simple and tasty recipe.

For a very easy and I think very good recipe, I buy a pack of McCormick Chili Seasoning and make according to instructions.  If you haven't tried them before, those McCormick seasoning packs are really good.  My favorite is the pulled pork seasoning.

When we take our trip to LOW every year, I make a big Batch of chili and it don't last long. but that recipe is top secret although some on here look very good too.

I see some resembelences in some recipes as mine like meat, tomato, mustard liquid smoke, garlic, jalepenoooooos. green pepper onion chili powder




I think its about time for that Chili cook off FBO style.

I dont go around guessing cup sizes either I just know a nice rack when I see one.

I agree...did it ever occur to you that the reason the chili is always gone is because there is no other food and  becasue you can't catch fish to feed the drunken crew ???

No its a planned, deal chili, back straps and fish fry 3 nights on the ice. its bliss until the chili kicks in.  lets just say you should be somwhat drunk when cooking that way you will be obligated to experiment with ingredients until you find it just right, also the next day or 2 later it tastes way better once the flavors meld together.  There is no written recipe besides

 

2lbs buger _browed off and seasoned well with salt, pepper, chili powder and anyother flavors u like to add such as garlic powder, and or Onion pwder. and don't forget a healthy dose of Red chili flake

2 cans dark red kidney beans drained and warshed haha

2 really big cans of Hunts or whoevers diced Tomatoes, also somtimes find the fire roasted kind

1 big yellow onion, 1 green pepper, 2 jalapenos seeded.

some mustard, liquid smoke, Honey.

Get your monster pot, and put in the maters, chopped green pepper, jalepenos, and Onion and beans. seasoning like but not limited too..... good chili powder ,fresh minced garlic, more chili flake haha,  salt, pepper. about 1/4 cup honey maybe slightly less depends I add to taste as I go looking for the sweet heat.  I also don't use water I use V-8 spicy the whole dam thing yes the big bottle.  oh a coupe drops of liquid smoke.  I also add beer if I happen to be drinking at the time which is usually the case.

This will get you started it looks confusing because I did not put it ina  good order  but I am sure you can figure it out. seems simple but it ridiculous and won't last long. also don't eat until next day then put back on the stove to reheat. be way hotter too.
