beaver pelts or food

has anyone hunted them for meat or just pelts.

I can't imagine eating beaver  just skinning them is a greasy mess.

When I was moose hunting in Quebec, we used the hind quarters for camp stew meat. Really rich meat.

I made some coyote sausage last year.  Meat is meat.  You mix it with pork and it tastes just like venison.

I would have to disagree. Furbearers are nasty little critters and can have diseases that are transmissable to humans.

Caution must be exercised while skinning and

handling any furbearing animal as they can carry

diseases transmissible to humans. Plague, tularemia

and leptospirosis have been acquired in the handling

and skinning of furbearing animals. Other

diseases, such as rabies, can also be acquired

through open cuts or wounds. Some general precautions

that should be taken to reduce risks of exposure

and prevent infection are:

 

1. Wear protective clothing including plastic, rubber

or latex gloves when skinning or fleshing.

2. Scrub the work area, knives, other tools and reusable

gloves with soap or detergent followed by

disinfection with diluted household bleach.

3. Avoid eating and drinking while handling or

skinning animals, and wash hands thoroughly

when finished.

4. Safely dispose of carcasses and tissues as well as

any contaminated disposable items such as latex

gloves.

5. Contact a physician if you become sick following

exposure to a wild animal or its ectoparasites (i.e.

ticks and fleas). Inform the physician of your

possible exposure to a wildlife-carried disease.

 I guess the meat above the base of the tail is pretty good.

I've never tried it, but I hear it makes a good stew.

Personally I can't imagine eating a beaver.

Seriously, I have tried beaver jerky. Not bad. I have a friend who does not waste anything on any animal. He was born 150 years too late.

HUNTDUX, I will get some your way to try this spring (as long as I don't have to try the pickled fish :).  My duaghter loves to trap spring beaver, not because she really likes trapping all that much but we save most of the meat from them.

That being the hind quarters, I have made roast, Shredded BBQ on buns and brought it to school for potluck and have never brought any home.  That is even with them knowing what it was prior to eating it.

If you take the silver skin off of the meat and do not get anything from the glands or oil sacs you would think that you are eating a sweeten beef.

We probably eat 50-70 pounds each year.

 Beaver tail use to be considered a delicacy.  I would try it if someone would skin me one.

I'm up for trying anything, thank you for the offer. I won't push any pickled fish on you either. I might bring somthing though. Thanks again.
